If you’ve been following along, you may have noticed that I’ve been experimenting with low carb sandwiches lately. My new favorite “bun” is a pickle chip, and my least favorite “bun” is an oopsie roll … but to each his own!
My goal was thirty but I found that some of them just didn’t warrant a blog post, so I decided to post the fifteen that were most special to me and that I enjoyed the most. The goal was “quick and easy” since they’re lunch sandwiches, so some of them are simple, but some of them are not … ::cough:: oopsie ::cough::

Not to pick favorites or anything, but this keto sandwich is my favorite on the list, and I have been making it over and over again!
This keto sandwich is another in my top two. I love spicy guacamole and I love egg salad, so I was pretty proud of this crave-worthy combo.

This is certainly my go-to sammy, a classic in my book. Pick your favorite Italian meats (or whatever meats you have in the fridge) and wrap it up.

This keto sandwich turned out to be a nice spin on pulled pork. Nothing can really replace a soft bun with pulled pork, but lettuce wraps definitely recreate it in a fresh way, especially with the fresh lime-cilantro coleslaw.
This is your basic BLT recipe sans bread, but I recommend adding a bit of spicy guacamole if you can!
This is an easy-peasy little lunch snack to bring with you to work and I like them tons.
