If you’ve been following along, you may have noticed that I’ve been experimenting with low carb sandwiches and keto sandwiches lately. My new favorite “bun” is a pickle chip, and my least favorite “bun” is an oopsie roll … but to each his own!
My goal was thirty but I found that some of them just didn’t warrant a blog post, so I decided to post the fifteen that were most special to me and that I enjoyed the most. The goal was “quick and easy” since they’re lunch keto sandwiches, so some of them are simple, but some of them are not … ::cough:: oopsie ::cough::

This keto sandwich turned out to be a nice spin on pulled pork. Nothing can really replace a soft bun with pulled pork, but lettuce wraps definitely recreate it in a fresh way, especially with the fresh lime-cilantro coleslaw.
This is your basic BLT recipe sans bread, but I recommend adding a bit of spicy guacamole if you can!
I wanted to beef it up (get it?), so I made a new kind of steaky explosion, the low carb steak and pastrami bomb. It really is an explosion of flavor with deli mustard, creamy mayo and cheesy goodness mixed with the complexity of a pastrami and steak marriage. Muah!
