Today I was craving pizza and the cravings were relentless. I needed some salty cheese and sweet marinara like no other. And although the cauliflower crust pizza is delicious, it also takes some time and I was feeling lazy. Looking in the fridge, I saw a pack of large salami and thought, hey that would make a great crust. Then I saw my pasta sauce, which I discovered at my local grocery store, and only had TWO net carbs per serving. Then I saw the mozzarella cheese. I realized that I could make keto pizza bites. Winner!
The best part? The little keto pizza bites rang in at just a 1/2 carb each. Depending on your pasta sauce, they could get higher, so either take it easy on the sauce or find a low-carb sauce you like. I can’t emphasize the deliciousness. Roll them up and nom them down.

Ah-Mazing Keto Pizza Bites Recipe
Servings: 1
Prep Time: 5 minutes | Cook Time: 5 minutes | Total Time: 10 minutes
Nutritional Facts: 2g Net Carbs| 525 Calories | 27g Fat | 3g Carbs | 41g Protein | 1g Fiber
Ingredients:
- 1/4 cup marinara sauce
- 8 small marinated mozzarella balls
- 4 uncured genoa salami slices or pepperoni
- Garnish with fresh basil, cracked black pepper, and grated parmesan cheese if desired.
Steps:
- Turn on your oven broiler for 450 degrees F.
- Add your salami to a baking sheet, preferably on something non-sticky like parchment paper (as long as it says it can withstand 450 degrees).
- Add little spoonfuls of pasta sauce to the salami and then spread it around with your spoon.
- Cut the mozzarella balls in half and place two halves on each slice of salami with sauce.
- Pop them in the oven for 5 minutes.
- Take them out and lay them out on a paper towel to suck up some of the greases.
- Garnish with basil, fresh cracked black pepper, grated parmesan, and enjoy!

I don’t see the cooking instructions for these. What temp and how long in the oven?
Sorry ’bout that! They only take a few minutes, so I threw them in the toaster oven on 400 for about 5 minutes. 🙂 I’d say throw them in the oven around 400 until they melt and you’ll be good!

Did you consider dextrose? It’s corn sugar. Some of us will be affected as dextrose is present in MOST brands of salami and pepperoni. ALSO potato and modified food starch is used in MANY brands of shredded cheese as a decaking agent, so that also is a consideration as hidden sugar.
You should absolutely stuff it with whatever you feel comfortable with, and shredding your own cheese is also a popular option to avoid caking agents.

Yes, you can shred your own or just watch the ingredients, most organic brands are pretty pure.

My favorite thing about keto is that I get to eat pepperoni and cheese with no regrets LOL. We had pizza night with friends one evening, and I made these for myself, but my friend ended up eating half of these instead of the regular pizza! Needless to say, these were a m a z i n g.
