Does an Italian sub really have a recipe? Well, now it has a keto recipe, even if it’s a hacky one.
I love lettuce wraps, and after a very short while it’s hard to miss bread. The only time I truly miss it is with hotdogs and hamburgers but over time even those get easy to take in a properly made lettuce bun.
Yesterday I had one filled with cheese, tuna salad and mustard for a few net carbs.
Today I wanted to mash all the cold cuts and salamis I had in the fridge into a tasty keto Italian sub wrap, and so I did. Although I’m sure it would have been even better with the proper meats. I’ve also done it with real Italian meats and more salami, so consider those when you decide to make it!
Tasty Keto Italian “Sub” w/ Lettuce Wrap
Servings: 1
Prep Time: 5 minutes | Cook Time: 0 minutes | Total Time: 5 minutes
Nutritional Facts: 3g Net Carbs| 16 Calories | 0g Fat | 3g Carbs | 0g Protein | 0g Fiber
Ingredients:
- 1 organic lettuce leaf (outer leaf)
- 1 slice of organic American cheese
- 3 slices of turkey (the small slices from Oscar Mayer’s deli fresh)
- 3 slices of ham (same)
- 4 slices of pepperoni
- 1 large round of Italian dry salami (Naturalissima brand)
- 1/2 of a chopped up pepperoncini
Steps:
- Pile up the ingredients in the bowl of a giant lettuce leaf.
- Wrap it and you’ll have the magical sandwich you saw above!
- I added 2 tablespoons of Italian Dressing (I used one made locally “Fanny Mencoboni’s Original Italian Dressing” which has 1 carb and is delicious) on the side for dipping.
- Enjoy!
Notes: Feel free to do the inverted wrap too if you’re out of lettuce or simply don’t have big enough leaves as I did here with some rosemary ham, muenster cheese, mustard, and arugula. Ham is always such a pain to wrap, though.
