It’s taken me some time to warm up to guacamole, but now that I have, I’m a little bit in love. Now, don’t scorn me for using the pre-made spicy guacamole because a.) I’m new to this whole guacamole thing and b) the goal of these posts is to make quick lunches.
So here’s the easy recipe I tried out today for Spicy Avocado Egg Salad. I was thinking that I might be able to replace the mayo completely with avocado, but I think the mayo (if you eat dairy) really helps with the flavor.
You can choose to sandwich it on whatever you want – lettuce, bell peppers, Paleo bread, those weird little keto rolls made of egg – whatever you like. These portions will make one small sandwich, using one egg. If you want to make more, just double, triple and quadruple the recipe.
Spicy Avocado Egg Salad

Ingredients:
- 1 hard-boiled egg
- 2 tsp spicy guacamole
- 1 tsp mayonnaise
- salt and pepper
Steps:
- Prepare your hard boiled eggs the day before to save yourself some time.
- I like to use an egg slicer to dice my egg – one set of cuts in the wide direction, then carefully re-positioned and cut again the long way.
- The next part is easy – combine all the ingredients together and add salt and pepper to taste!
- Fill your sandwich vessel of choice and enjoy!
