Sugar-Free Lavender Simple Syrup

The one and only non-whole food thing that I use is a sugar-free sweetener, and I stick with ones made with erythritol and stevia. Although it’s much easier to just buy the stuff, I’ve been experimenting with making my own at home. This sugar-free lavender vanilla syrup infuses recipes like ketogenic pancakes, mug cakes, and iced teas with a bouquet of lavender flowers and comes up to about 1 net carb per teaspoon.

I have also made this Sugar-Free Lavender Simple Syrup recipe with a vanilla bean. It tastes great, but visually, it’s not as pretty as using lavender by itself.

Sugar-Free Lavender Simple Syrup Recipe

Servings: 48 (1 tsp servings)

Prep Time: 5 minutes | Cook Time: 5 minutes | Total Time: 10 minutes

  1. In a small saucepan, bring the water to a boil over high heat.
  2. Reduce the heat to low and mix in the lavender, erythritol, stevia, and vanilla. Simmer for 5 minutes.
  3. Strain the syrup into a glass jar through several layers of cheesecloth or a fine-mesh strainer. If the sweetener solidifies a bit, throw it in the blender until smooth.
  4. Cover the jar and refrigerate for up to 2 weeks.

Can I use powdered stevia instead?

Very weak could barely taste the lavender flavor when adding to warm milk. Probably needs more lavender buds or longer steep/simmer. I tried for 10 min (instead of 5).
