Watermelon Cream Soup

Just when you thought your dessert life was confined to berries and eggs, know that watermelon is made of mostly water and is a lovely occasional treat. I just love this refreshing Low Carb Watermelon Cream Soup dessert and with a little added fat from the sour cream, it’s even keto-encouraged. The best part is that it only takes 5 minutes to throw together.

Watermelon Cream Soup Recipe

Servings: 1

Ingredients:

  • 3/4 cup seeded watermelon chunks
  • 1/4 cup raspberries
  • 2 tbsp organic sour cream
  • 1 tbsp sugar-free vanilla bean sweetener syrup (I used Torani)
  • 1/4 tsp fresh lemon juice
  • 1/4 tsp chopped fresh mint
  • 1/2 cup freshly whipped cream (made from whipping heavy cream)

Steps:

  1. In a blender, combine the watermelon, raspberries, sour cream, sweetener, lemon juice, and mint.
  2. Pulse until smooth.
  3. Pour the soup into a small bowl and top with the whipped cream. Serve immediately.
