So I’ve been playing with low carb keto meatball recipes and most of them are a little dense. Tonight I threw something together that I hadn’t even planned on blogging about, but they came out so good that I had to! It was so nonchalant that I even forgot to add an egg, which was a good thing because they didn’t need one! You’ll never need to miss bread or breadcrumbs again. These are the best keto meatballs – ever!
These were, by far, the moistest meatballs I’ve made on keto so far. The mozzarella really softens the whole joint up while adding flavor. From now on this is how I make meatballs! I served them with yellow and green squash noodles, made almost exactly (no lemon) the same way as they were in my lemon cream squash ribbon pasta. They were topped with Rozzano Marinara, which I found at BJ’s and only has 2 net carbs per serving.
The Best Keto Meatballs: Amanda’s Mighty Meatballs
Makes: 5 Large Meatballs
Prep Time: 5 minutes | Cook Time: 15 minutes | Total Time: 20 minutes
Nutritional Facts (per meatball): 2g Net Carbs| 362 Calories | 23g Fat | 2g Carbs | 26g Protein | 0g Fiber
Ingredients:
- 1 lb ground beef (or 1/2lb beef, 1/2lb pork … or … (1/2lb beef, 1/2lb pork, 1/2lb lamb)
- 1/2 cup grated parmesan
- 1 tbsp minced garlic (or paste)
- 1/2 cup mozzarella cheese
- 1 tsp ground black pepper
Steps:
- Mix it all together in a bowl and roll these babies up into meatballs. I decided to make big ones, so it made about 5 large meatballs.
- You can cook them on the stove with some butter/oil/ghee but mine were pretty big so I browned them in an oven-safe pan and then put it in the oven at 400 degrees for about 20 minutes until they were cooked to 165 degrees F.
- When they were done, I added them to a pot of sauce I was cooking for a few minutes to let them soak in all the flavor, and lighten them up even more. Then I served them with some freshly sauteed zoodles and sauce.

Just tried this recipe last night and it was fantastic! I love the way the cheese in the meatballs keeps it super tender and moist. I thought I was going to have to give up making meatballs, but you saved me! Thanks for a great recipe!
[…] with nailing down my most recent craving – meatball subs. It all starts with my favorite low carb meatballs, which are pretty much carbless anyway, topped with a naturally low-carb sauce (there are so […]
Loved it! Left out the garlic and added an egg. Made little meatballs so I only baked them for 15 minutes. Absolutely fabulous.
I like your presentation, all except for the meatballs, which is a disaster, both visually and more than likely consistency and flavor. To fix the visual aspect, add a few table spoons of water to the mixture and keep your hands wet while forming the balls. Of course, don’t over mix 🙂
Really? Knocking something you didn’t even make? Troll much?

Wonderful. I added two tablespoons of flax seed meal and a little water. Browned the meatballs, then baked them with fresh tomatoes, spinach, mushrooms, roasted garlic, olives, and ricotta for a low carb no crust calzone. Delicious!
Intruder alert! I’m more of a South Beach kind of person. These meatballs were perfect for Phase 1. Since I didn’t have your sauce, I added garlic, a teaspoon of basil and a tablespoon of Parmesan to a diced tomato and 8 oz of tomato sauce. I know that probably puts the carbs too high for you, but it was okay for us.
Mmm, good! I made them out of ground pork and ground turkey and I added a bit of Italian seasoning.
What is the nutritional breakdown??
Hi, what sauce do you make?
[…] Meatballs with garlic roasted broccoli and garlic parmesan cauli-rice […]
Interestingly enough, this is how I’ve been making my meatballs, sans the mozz, but I’ll add that next time. I also add Italian seasoning.
I havent gotten into the zoodles craze yet, but I find that steamed broccoli OR roasted cauliflower makes a great sub for pasta.
Thanks for all the great recipes.
How many calories for 1/5 of the recipe?
Multiply grams of protein and grams of carbs by 4 and grams of fat by 9, so for the 5 large balls above, that would be: 4x(1+22)+9×18 = 254 Kcal, and for just one meatball, 254/5 = 51 Kcal
100% awsome ..super easy to make ! Thanks
Planning to make this tonight; just want to check – do you use the grated Parmesan that comes in powdered form or fresh grated?
Thanks!
I have used both, but I believe in this recipe I used the grated.

I am confused. You made five large meatballs out of one pound of meat. Then it says, at the top, that the serving size is five meatballs. And that it is two carbs per serving…which means two carbs for the whole recipe. Then, in the comments, you said one carbs per large meatball. So, my question is, how many carbs in the whole recipe? That way it doesn’t matter what size I make, I can easily figure out the carbs. Sorry to appear so nit picky!
Hi Patti,
Sorry for the confusion, it makes 5 meatballs, and each meatball is 2 net carbs. The recipe itself is correct. That said, it’s always best to calculate your own because not all brands of cheese have the same number of carbs, and most of them in this recipe come from the cheese and garlic. — Amanda
