Creamy Keto Eggnog with Almond Milk

Ingredients:
- 2 large free-range eggs
- 1 cup unsweetened almond milk
- 2 tbsp sugar-free vanilla sweetener
- a pinch of vanilla bean seeds
- a pinch of ground cinnamon
- a pinch of ground nutmeg
- 1/4 cup unsweetened whipped cream
Steps:
- Blend ingredients until smooth.
- Transfer mixture to a small saucepan and heat it over medium-low heat until thick, about 15 minutes, stirring frequently.
- Cover the pan and refrigerate it for at least 3 hours, or overnight.
- Fold the whipped cream into the eggnog and pour into a glass to serve.

I am not familiar with vanilla bean seeds…I see paste and powder…appreciate any clarification :))
It’s the inside of a vanilla bean, so you can slice it in half and then you scoop them out with a knife. 🙂

Yes, Rum has no carbs (though it may stall you, because your body burns alcohol before fat, just like sugar.
