Creamy Keto Eggnog with Almond Milk

This keto eggnog will be on your forever list of go-to drinks. It’s rich and creamy and tastes like custard. I often make this at night so that it’s ready for breakfast the next morning.

Creamy Keto Eggnog with Almond Milk

Servings: 1

Prep Time: 5 minutes | Total Time: 5 minutes

Ingredients:

  • 2 large free-range eggs
  • 1 cup unsweetened almond milk
  • 2 tbsp sugar-free vanilla sweetener
  • a pinch of vanilla bean seeds
  • a pinch of ground cinnamon
  • a pinch of ground nutmeg
  • 1/4 cup unsweetened whipped cream

Steps:

  1. Blend ingredients until smooth.

  2. Transfer mixture to a small saucepan and heat it over medium-low heat until thick, about 15 minutes, stirring frequently.

  3. Cover the pan and refrigerate it for at least 3 hours, or overnight.
  4. Fold the whipped cream into the eggnog and pour into a glass to serve.

I am not familiar with vanilla bean seeds…I see paste and powder…appreciate any clarification :))

It’s the inside of a vanilla bean, so you can slice it in half and then you scoop them out with a knife. 🙂

Yes, Rum has no carbs (though it may stall you, because your body burns alcohol before fat, just like sugar.
