Broccoli salad seems to be my thing this month. It’s September and I’m supposed to be drowning myself in a hot bath of unsweetened, extra-creamy pumpkin spice lattes, but all I can think of is fresh broccoli bathed in mayo and delectable accouterments. And so fresh it is! I hope you enjoy this recipe. The longer it marinates, the better it gets!
Fresh Sriracha Broccoli Salad
Servings: 4
Prep Time: 10 minutes | Chill: 2 hours | Total Time: 2 hours 10 minutes

Ingredients:
- 4 cups, chopped broccoli (about 1-1.5 large heads of broccoli)
- 1/2 a medium-sized, diced red bell pepper
- 1/2 cup shredded cheddar
- 1 cup mayonnaise
- 1/4 cup, dry roasted and shelled sunflower seeds
- 6 slices crumbled bacon
- 1/2 tbsp apple cider vinegar
- 1/4 to 1/2 tbsp Sriracha sauce
- salt
- cracked black pepper
Steps:
- Mix all ingredients together in a bowl and toss.
- Store in a sealed container for at least two hours, then enjoy!

I’ve made this dozens of times. It’s a favorite for my husband and me, and guests love.
I love this salad! I even crave it when I fall off the keto wagon! My husband loves it as well. I usually double it and feed off of it for quite a few days. It’s a delicious and dish and easy to take to a pot luck dinner. Keto and non keto will both love it
