Fresh Strawberry Lime Popsicles (Low Carb, No Sugar Added)

Up until now I hadn’t thought deeply about having popsicles because I considered them probably off limits, but I’ve been getting creative with fruits lately so I decided I would see if added sugar (I don’t do Stevia either) is a required component of a good Popsicle (spoiler: it totally isn’t!). These ridiculously fresh and tasty Strawberry Lime Popsicles use the simple sweetness of berries and lime. They only have 1 net carb per popsicle and no added sugars or additives.

Don’t tell my neighbors, but between shoveling ourselves out of snowstorm after a snowstorm I’ve secretly been pining for popsicles (intermittently with cravings for hot chocolate). Strawberry and lime are one of my favorite fruit combos, in fact, I infuse water with it all summer long. So I went with this mix for my first batch. I added raspberries too because they add a little more complexity that works with the lime juice.

I have to say, these Strawberry Lime Popsicles will be in my freezer every summer from now on! In case you’re wondering, this is the popsicle mold I use. They work great!

Fresh Strawberry-Lime Popsicles

Servings: 4

Prep Time: 5 minutes | Chill Time: 3 hours | Total Time: 3 hours

Nutritional Facts: 1g Net Carbs| 10 Calories | 0g Fat | 2g Carbs | 0g Protein | 1g Fiber

Ingredients:

  • 10 medium to large strawberries
  • zest of 1 lime
  • 2 tbsp water

Steps:

  1. Remove any stems from fruit
    strawberry lime popsicles
  2. Zest your lime
    strawberry lime popsicles
  3. Blend together (I used a smaller single serving blender attachment)
    strawberry lime popsicles
  4. Disperse into your choice of popsicle tubes, freeze, and enjoy!

Thank you so much for this recipe. It’s very simple. My husband is new to the keto diet and is hankering for something cold (he is an ice cream and Sorbet junky). He is going to flip when he sees that being healthy doesn’t mean giving up sweets. ☺

I think my favorite thing about your site is that you aren’t afraid to make recipes with fruit, and for that I will be a forever fan.

We made these strawberry pops over the weekend and they were amazing. I didn’t miss the sugar one bit, in fact, I prefer them without sugar, you can really taste the strawberry in its purest form this way.
