Can this be made without the xanthan gum?

Claudia M. Cain September 13, 2018 - 1:00 pm

I would say yes, as it’s a thickener. I’ll try tomorrow w/o xanthan gum.

Amanda C. Hughes September 13, 2018 - 1:02 pm

Yes, I think so, it thickens it, so if it seems like it needs a little more body, that’s why 🙂

Does the cream go in the blender or it’s only used as a topping (after whipping it)?

Amanda C. Hughes February 18, 2019 - 1:03 pm

Yes it goes into the blender, if you whip cream separately you’d add that on top but the amount in the recipe is for the drink itself.

Where does the fiber come from in this recipe?

Amanda C. Hughes March 18, 2019 - 1:04 pm

The Xanthan Gum.:)

We made it without the xanthan gum (ran out) and it was amazing on this hot summer day. Next time I have some x. gum I will be sure to add it and see how it is.

I made it but came out weird. Half is liquid and the other half is like a slushie. It didn’t all blend together smooth. Tips?

Maybe less ice? That would be my guess, maybe I have smaller ice cubes than you, or even the blender could make a difference. I’d try less ice and only adding if you need it.

Thank you for this. I’m using it as a template to come up with my own personal iced coffee drink. I used 8 ice cubes, only 3 tbsp of whipped cream and added 2 tbsp protein powder. Great! Hard to think of how I could improve it any more.

Whipping* cream, that is.
