Strawberry Balsamic Zoodle Salad {Naturally Low Carb + Keto}

This sweet and savory strawberry balsamic zoodle salad is just one (very filling) serving, and it can easily be duplicated to make a large batch if needed. The combination of strawberries, goat cheese and balsamic is just divine!

Sometimes you want your zoodles hot, and sometimes you want them chilled. And when you want them chilled, you want them either savory (see: bacon bleu zoodle salad) or sweet. With this dish, which would be great for a side, a lunch, or a BBQ, I’m tackling the sweet side of zoodles.

What I love most about zucchini is that it’s totally flexible. It doesn’t have a lot of taste on its own, which means you can persuade it to taste however you want. Sweet, salty, garlicky, peppery, even strawberry-y. Combined with the goat cheese and pistachios, and a strawberry balsamic dressing made with delicate avocado oil, this one is a new favorite around here.

Strawberry Balsamic Zoodle Salad

Servings: 1

Prep Time: 5 minutes | Total Time: 5 minutes

Ingredients:

For the salad:

  • 1 cup zucchini noodles
  • 1 sliced strawberry
  • 1 tbsp crumbled herbed goat cheese
  • 1 tbsp pistachios

For the dressing:

  • 4 strawberries
  • 2 tbsp high quality balsamic vinegar
  • 2 tbsp avocado oil
  • 1/2 tsp minced garlic
  • 1/8 tsp salt
  • 1/8 tsp cracked black pepper

Steps:

  1. In a small salad bowl, toss salad ingredients.
  2. In a blender, combine dressing ingredients and blend.
  3. Mix salad with 1 tbsp strawberry balsamic dressing (save the rest for another salad, or use it for a quadruple batch)
  4. Enjoy!
