The past few weeks I’ve been in sunny Napa Valley, which is basically my happy place and also where I got married. I knew coming out here I’d probably be breaking a few keto rules, and would likely go over my normal quota of wine. But one thing I’ve learned is that there’s nothing that beats fresh food and veggies that don’t make you feel heavy and bloated. Say no to home fry bloat, and try this lighter, healthier edition. While homefries are a dime a dozen, these keto homefries which use cauliflower instead of potato are a lighter, fresher version. The onions and pepper caramelize while the cauliflower steams, and once they meld together, you’ll be like, “potato who?”
These keto homefries are great alone, or split in two and served with an egg on top.
Keto Homefries with Caramelized Cauliflower, Onion & Peppers
Servings: 2
Prep Time: 10 minutes | Cooking Time: 5-10 minutes| Total Time: 15-20 minutes

Ingredients:
- 1 tbsp olive oil
- 1 head of chopped fresh cauliflower
- 1/2 of a chopped yellow onion
- 1/4 of a chopped yellow pepper
- 1/4 of a chopped red pepper
- 1/4 of a chopped green pepper
- 1/4 tsp poultry seasoning
- 1 big pinch of dried dill
- salt and pepper to taste
Optional ingredients:
- 2 eggs
- fresh chopped chives for garnish
Steps:
- In a medium skillet, heat olive oil over medium heat.
- Meanwhile, in a bowl, add 1/2 inch of water, and then chopped cauliflower. Microwave for 4 minutes (or steam how you traditionally like to steam veggies)
- While the cauliflower is steaming, add the chopped peppers and onions to the skillet.
- Let cook for one minute, then add 2 tbsp of water. When water reduces, add another tbsp and keep adding while cauliflower steams (this helps soften and caramelize the onions and peppers).
- Once cauliflower is done steaming, let sit in the microwave for two minutes.
- Add poultry seasoning and dill to the veggies, and mix.
- Add cauliflower and mix. Let meld together for 5-10 minutes until desired softness.
- Add salt and pepper to taste. ( I used 1/4 tsp salt, and pepper to taste). Garnish with freshly chopped chives if you desire.
- If you like, split into two servings and top with sunny-side up eggs. Just be sure to add the carbs for the eggs. Enjoy!

I don’t understand why my 5 for this recipe doesn’t work. But I LOVED this recipe but I add green onions to all recipes for the higher nutritional value than white, red or yellow onions. And green onions helped my husband to recover from Age-related Macular Degeneration
I’ve eaten this with scrambled and fried eggs and both ways are delicious. I love how you have so many creative ways to eat cauliflower since it’s so easy to get sick of it on keto.
