Keto Homefries with Caramelized Cauliflower, Onion & Peppers
The past few weeks I’ve been in sunny Napa Valley, which is basically my happy place and also where I got married. I knew coming out here I’d probably be breaking a few keto rules, and would likely go over my normal quota of wine. But one thing I’ve learned is that there’s nothing that beats fresh food and veggies that don’t make you feel heavy and bloated.
While homefries are a dime a dozen, these keto homefries which use cauliflower instead of potato are a lighter, fresher version. The onions and pepper caramelize while the cauliflower steams, and once they meld together, you’ll be like, “potato who?”
