Lemon & Herbs de Provence Rubbed Turkey

Making a turkey for a crowd is no small task, so bravo for embracing the art! This Lemon & Herbs de Provence Rubbed Turkey is extremely moist thanks to all of the herbed butter that goes under the skin, and also highly aromatic from the lemons. This is a solid choice for a turkey dinner, you really can’t go wrong with this combination of lemon, herbs, and butter!

Lemon & Herbs de Provence Rubbed Turkey Recipe

Servings: 12

Prep Time: 10 minutes| Cooking Time: 3 hours 30 minutes | Total Time: 3-4 hours

Ingredients:

  • 1 – 12 pound turkey
  • 1 cup, softened salted butter
  • 1, sliced and de-seeded lemon
  • 2 tbsp Herbs de Provence
  • salt and pepper

Steps:

  1. Preheat oven to 325 degrees F.
  2. Add your turkey to a roasting rack within a roasting pan, and tuck the wings behind the turkey.

  3. Slide your fingers under the skin of your turkey, starting near the cavern and leading toward the neck. Try to create a pocket without tearing the skin.

  4. Combine softened butter and Herbs de Provence in a bowl and cream together. Rub butter mixture all over the turkey and under the skin.
  5. Place lemon slices, and in the cavern of the turkey—along with anything else you’d like to add for aroma, like onions and rosemary—under the skin and generously salt and pepper the turkey. Tie the legs together with cooking twine.
  6. Roast the turkey according to your weight (approximately 15 minutes per pound).
  7. Feel free to baste throughout the process and especially at the end. It makes some truly excellent drippings!
