Before you begin, this homemade beef jerky recipe requires an overnight marinade, and a food dehydrator, so plan accordingly. Rather than trying to sweeten this recipe, it’s keto-friendly and pure savory jerky full of smoke flavor and ready to be brought on hiking trips, as snacks for work, or as a compliment to your cheese plate, without worrying about the carbs.
Wicked Good Homemade Beef Jerky Recipe
Servings: 16 – 1 oz. servings
Prep Time: 5 minutes plus time to marinate| Cooking Time: 4-6 hours | Total Time: 28-30 hours
Nutritional Facts: 1g Net Carbs | 96 Calories | 5g Fat | 1g Carbs | 12g Protein | 0g Fiber
Ingredients:
- 2 lbs lean flank steak
- 1/3 cup coconut aminos (you can also use Tamari)
- 1 tbsp liquid smoke
- 2 tsp garlic salt
- 1 tsp onion salt
- 1 tsp cracked black pepper
- 1 tsp ground allspice
- 1 tsp apple cider vinegar
Steps:
- Remove any excess fat from your beef, because fat cause early spoilage, and it’s also the reason why this is a rare case in keto to choose a lean cut of beef.
- Slice your flank steak into 1” strips, with the grain, although cutting against the grain with jerky will result in crumbly jerky that some people love.
- Combine steak, and the rest of the ingredients into an air-tight container and let marinate overnight.
- Turn your dehydrator to 160 degrees, and cook for at least four hours, until it reaches your desired consistency. Follow your manufacturer’s instructions, because some models may require you to rotate your trays during the process. 2-3lbs of raw steak will result in about 1lb. of dried jerky.

Amanda, what is the serving size? I just purchased a food dehydrator and am excited to make some jerky with my girlfriend for this weekend! Are there any modifications you played around with for the flavor, outside the current recipe listed? I would like to try and make a few keto-friendly batches.
Thank you,
Zach and Celine
i don’t have a food dehydrator and was wondering if i could make this in the oven?… if so what temperature and for how long?
Since no one answered you over a year ago…This may help someone else as well

Loved it, first time I have made Jerky, left in for about 5hrs 👌

The jerky turned out delicious although the timing is a bit off. My dehydrator which works at 165 degrees took 8-10 hours instead of 4 or 5 as the recipe suggests. This is to get it to the consistency that you’d find in a store bought package. Other than that, the taste is excellent!
