The Best Keto Cauliflower Mash Recipe Ever

I love a basic whipped cauliflower, which tastes like heaven with butter and salt, but for this keto cauliflower mash, I’ve added in gorgonzola. If you’re up for an adventure, add the gorgonzola for an earthy, musky flavor. Or leave it out and enjoy in place of plain mashed potatoes!

The Best Keto Cauliflower Mash Recipe Ever

Note: If you have cheesecloth, bundle your cauliflower in it after steaming to get out as much extra moisture as you can. This can prevent a soggy side, especially if you’re using frozen cauliflower.

Ingredients:

  • 14 ounces, chopped fresh cauliflower
  • 1 cup gorgonzola cheese
  • 1/4 cup chicken broth
  • 1 tbsp minced garlic
  • 1/4 cup, softened cream cheese
  • 3 tbsp salted butter

Steps:

  1. Preheat oven to 350 degrees F.
  2. Cover the bottom on a frying pan with a little bit of water and bring to a boil.
  3. Add cauliflower and cover to steam for about 7 minutes.

  4. Remove cauliflower and drain.
  5. Add all ingredients, including the cooked cauliflower to a blender and pulse until it reaches a consistency you like.

  6. Pour into a 9×9 baking dish and bake for 15 minutes.

  7. Garnish with gorgonzola (if using) and enjoy!

What’s the purpose of baking this after blending? I’ve always just blended/mashed and returned to the pan just to heat through. Does the baking drive out the extra moisture or something?

Basically, yes, it’s more mashed potato-ey but it works both ways!

This recipe reunited me with one of my favorite cheeses, gorgonzola. I had forgotten how much I loved it. This really was the best cauliflower mash recipe ever!
