I love a basic whipped cauliflower, which tastes like heaven with butter and salt, but for this keto cauliflower mash, I’ve added in gorgonzola. If you’re up for an adventure, add the gorgonzola for an earthy, musky flavor. Or leave it out and enjoy in place of plain mashed potatoes!
If you have cheesecloth, bundle your cauliflower in it after steaming to get out as much extra moisture as you can. This can prevent a soggy side, especially if you’re using frozen cauliflower.
