Bacon Mustard Glaze

Spicy mustard and smoky bacon dance across your taste buds with a surprise somersault in the middle when this bacon mustard glaze is paired with pork chops or chicken.

Bacon Mustard Glaze

Servings: 1 1/2 cups

Ingredients:

  • 1 pound diced center-cut bacon
  • 2 tbsp ghee
  • 1 diced shallot
  • 1/2 cup bone broth (or organic chicken broth)
  • 1/2 cup dijon mustard
  • 1 tbsp creole mustard (any seeded mustard will work)
  • 1 tbsp fresh thyme
  • 1/4 cup mascarpone

Steps:

  1. In a skillet, crisp the bacon over medium heat, about 5 minutes.

  2. Add the ghee. When it is melted, add the shallot and cook until soft and translucent, about 5 minutes.

  3. Stir in the broth, Dijon mustard, creole mustard, and thyme. Bring to a boil, then reduce the heat to a simmer. Stir in the mascarpone, allowing it to melt and thicken the glaze, about 2 minutes. Use immediately. This glaze goes perfectly with chicken or pork.
