Keto Roast with a Cinnamon Chili Spice Rub

Tis the season for cinnamon on just about everything. Despite the chili, this Cinnamon Chili Keto Roast isn’t spicy, but it does smell and taste like the holidays. You won’t even need potpourri when this roast is in your oven.

Keto Roast with a Cinnamon Chili Spice Rub

Servings: 12

Prep Time: 5 minutes | Cook Time: 20 minutes per pound | Total Time: about 2 hours 25 minutes

Ingredients:

  • 6 lb. rump roast (1/2 pound per person you want to serve)
  • 1 tsp. ground cinnamon
  • 1/2 tsp. chili powder
  • 1 tsp. dried thyme
  • 1/4 tsp. allspice
  • 1/4 tsp. ground ginger
  • 1/4 tsp. ground nutmeg
  • 1/2 tsp. onion powder
  • 1/2 tsp. salt
  • 1/4 tsp. ground black pepper

Steps:

  1. Preheat the oven to 375 degrees F.
  2. In a bowl, combine all ingredients.

  3. Rub your roast all over, from top to bottom.

  4. In a medium skillet, add olive oil and heat to medium-high heat.
  5. When the skillet is hot, sear the roast on all sides to lock in the juices.
  6. Put in a roasting pan and add to the oven.

  7. Cook to a medium-rare temperature of 130-140 degrees F, (approximately 20 minutes per pound) then let rest for about 10 minutes. You can also cook it in a slow cooker on Low until it reaches the same temperature.
