Do you ever miss cereal on keto? Especially when I have a cold or don’t feel well, all I want to do is curl up with some bad TV and eat a bowl of cereal. I’ve made a few kinds of keto cereal in the past, but this one is a keto granola and has a totally new (and so very simple) spin.
It’s made with flaked coconut, diced walnuts, and sliced almonds, and it goes great with unsweetened almond milk. This keto granola is super easy to make and perfect to eat on the go. You can make this in about 15 minutes, and 10 of that is baking! Here’s the recipe, I love it!
Crunchy Cinnamon Keto Granola Recipe
Servings: 4
Prep Time: 5 minutes | Cooking Time: 10 minutes | Total Time: 15 minutes
Nutritional Facts: 4g Net Carbs| 458 Calories | 43g Fat | 12g Carbs | 10g Protein | 8g Fiber
Ingredients:
- 1 cup sliced almonds
- 1 cup unsweetened coconut flakes
- 1 cup diced walnuts
- 2 tsp cinnamon
- 4 teaspoons erythritol baking sweetener
- 2 tbsp coconut oil
Steps:
- Preheat oven to 375 degrees F
- Line a baking sheet with parchment paper.
- In a medium-sized bowl, toss all ingredients together.
- Spread out mixture over the baking sheet in as much of a single layer as you can.
- Add to oven and bake for about 10 minutes, or until mixture begins to brown (keep an eye on it, oven times may vary).
- Remove, mix again and enjoy in a bowl with cold unsweetened almond milk. Berries also make a great addition.
- To store, add to a ziplock bag with a paper towel to absorb any moisture.

Hi, I would love to try out your granola recipe, but how much Erythritol is in four packets?
It’s about 4 tsp. You can use any sweetener you like, and you can use more/less depending on how sweet you like things 🙂
Try also with a golden verson of erytrhitol bsaed sweetener (or just golden erythritol itself if you can find it, I have: -it’s made by a German brand though, so I think for US not avaible) for a more caramelized accent that enhanced sweeteness and armoas without being overpowering and with barely any aftertaste…healthy and delicious and CRUNCHY!
Then you can enrich the recipe with seeds (pumpkin and sunflowers seeds…toasted… so good) and also pieces of pecans or walnuts to your liking: I appreciate so much the sensation of munch you can have from things like granola when the crunchiness is often out of the menu!

I would have never thought to make grain-free granola like this but oh my gosh is it delicious! You get a night nutty, warm flavor with hints of sweetness. I love to top mine with raspberries. A huge bonus is that even my kids love the stuff. This is way healthier than boxed cereal and it is actually healthy for us.

This granola was absolutely delicious. I have leaky gut and been put on a crazy strict diet. This granola made me feel a little normal again. Just a bowl and milk was so good. Tonight, I had some chia seed coconut milk pudding and garnished it with blueberries, strawberries and granola. Oh My Goodness! It was amazing. Thank you for your recipe. You made me a happy woman. 🙂 Do you think this granola would freeze well? I keep nuts in the freezer all the time but didn’t know how it may effect the texture. I may try to freeze a little bit just to see how it does. I like to make big batches of things I love so I can have it on hand.
