Usually, in the summertime, I’m the fruit salad girl, always carving up a watermelon and filling it with every seasonal fruit I can stuff it with. This year I want to stick to tradition, but with something keto-friendly. And my new favorite ingredients are mascarpone cheese and sage, so I started there to make a keto fruit salad.
Us low-carbers that are opting out of artificial sweeteners get jack squat when it comes to desserts. On the other hand, the desserts we do get to enjoy are fairly simple, which is nice too. And this one is tasty. The sweetness of the berries, and the freshness of the sage, mixed with the creamy, rich flavor of mascarpone make this taste like a delicacy, and almost a little bit like vanilla bean ice cream. It’s amazing what a little fresh sage and a good vanilla bean can do. It’s absolutely delicious!
This keto fruit salad recipe is one serving so that it can be easily modified to however many you want to serve. It’s super quick to mix up and have a nice dessert, or you can multiply it by twelve and make it a party!

Berry-Sage Keto Fruit Salad in a Vanilla Bean Mascarpone Dressing

Ingredients:
- 1 cup of mixed berries (strawberries, raspberries, blueberries, blackberries)
- 1 chopped sage leaf
- 2 tbsp mascarpone
- 1 vanilla bean
- 1/2 tbsp heavy cream
Steps:
- In one bowl mix berries and chopped sage.
- In another bowl, mix together mascarpone cheese, vanilla bean pulp, and heavy cream.
- Microwave cream mixture for 10 seconds and mix.
- Add cream to mixed berries and enjoy.

If fresh sage is not available, fresh mint and fresh basil are a good substitute. Chiffonade whatever fresh herb so that more oils are released; chunks of herbs are not pleasant.
