A few years ago, I went to Atlantic City while eating low carb. I thought it would be impossible, but it turned out to be really easy. I ate a lot of buffalo wings, sure, but they also had plenty of cheese plates and one place even had bacon as a dinner appetizer. A treat I came across, at a buffet of all places, were these little goat cheese balls that had been rolled in crushed pistachios. I thought it was the most delicious thing I’d ever eaten and vowed to make it myself one day. And so here we are, and here it is!
What I love about these Pistachio + Sundried Tomato Goat Cheese Balls is that they’re naturally low-carb and so simple to make! It makes a great appetizer for any event, but it’s also perfect when you have a craving for something creamy and crunchy.
Pistachio + Sundried Tomato Goat Cheese Balls

Ingredients:
- 1 4oz package of sun-dried tomato goat cheese
- 1/2 cup de-shelled pistachios
- A pinch of salt
Steps:
- Cut your goat cheese into 7 slices and form into balls
- Use a mortar and pestle to lightly crush your pistachios (don’t grind them, whack ’em)
- Add salt to the pistachio mixture to taste
- Roll your balls around in the pistachio mixture to cover
- Once they’re all covered, roll one more time in the leftover pistachio dust
- Enjoy!

I love these Keto recipes but I can’t make most of them for my family. They always want to know fat and protein and calories and whatever. They’re not into: clean, fresh, natural or good for you if they can’t pigeonhole it. I sneak in as many as possible.
You could run the ingredients into a Recipe in MyFitnessPal (or similar app) to give your family the calorie and macro counts per serving.
Having never bought goat cheese, and having an abundance of cream cheese in the house, do you think it would work as a sub here?
The goat cheese was so good, I had to make my own sundried version before using it in this since they didn’t have any at the store, but no worries. My favorite thing about this recipe is that there are only 3 ingredients but it takes on such a taste depth that seems like it’s made with lots of ingredients. Very delicious.
