Ingredients:
- 1 lb. ground chicken
- 1 large egg
- 1 cup, shredded mozzarella cheese
- 1/2 cup, crumbled blue cheese
- 1/4 cup chopped celery
- 2 tbsp water
- 1 tsp onion powder
- 1/2 tsp sea salt
- 1/2 tsp cracked black pepper
- 1 recipe WickedStuffed Buffalo Sauce
Steps:
- Preheat the oven to 450 degrees F.
- Line a baking pan with parchment paper.
- In a large bowl, combine the chicken, egg, mozzarella and blue cheese, celery, water, onion powder, salt, and pepper. Use your hands to mix the ingredients well.
- Form the mixture into about 20 meatballs, placing them on the baking sheet as you do.
- Bake until the internal temperature reaches 165 degrees F, about 18 minutes.
- Meanwhile, warm the buffalo sauce in a medium saucepan over low heat.
- When the meatballs are done, toss them in the warm sauce and serve.
