Caramelized Onion Croquettes Stuffed w/ Goat Cheese

These delicious and seriously filling Caramelized Onion Croquettes are a favorite of my husband who devours three at a time. The goat cheese is amazing in this recipe, and I don’t recommend substituting, because goat cheese is one of the few kinds of cheese that can hold up to the heat without drooling right out of it.

The best part is that if you’re always looking for meals that can be enjoyed at home, but can also be easily packed up for work, these are perfect. These delicious goat cheese stuffed morsels freeze well, too!

Caramelized Onion Croquettes Stuffed w/ Goat Cheese

Servings: 4

Prep Time: 10 minutes| Cooking Time: 35 minutes | Total Time: 45 minutes

Ingredients:

Steps:

  1. Preheat oven to 400 degrees
  2. Make your bacon whiskey caramelized onions and then chop them up as small as you can (don’t chop before cooking because they will more likely burn than caramelize.)
  3. In a bowl, combine all ingredients except goat cheese.
  4. Measure out eight 5oz burger balls.
  5. Create use your fingers to create a little pocket in the middle of each.

  6. Add 1oz goat cheese to each of them, the holes should be large enough to easily plop them inside.

  7. Cover with remaining burger mixture and flatten to your desired consistency. Make sure to smooth out all seams, so that your goat cheese doesn’t bubble up and out.
  8. Cook for 30 minutes in the oven.
  9. When the desired temp is reached, switch to broil and crisp up for 5 minutes.
  10. Enjoy!
