Garlic & Swiss Keto Stuffed Mushrooms

Even the mushroom-haters at your party won’t be able to escape the wafting garlicky smell of this ooey, gooey Keto Stuffed Mushrooms recipe. They are roasted in sauteed garlic and filled with a light swiss cheese mixture that crisps up and gets perfectly golden on top.

Garlic & Swiss Keto Stuffed Mushrooms

Servings: 12

Prep Time: 10 minutes | Cook Time: 30 minutes | Total Time: 40 minutes

Ingredients:

  • 12 baby bella mushrooms
  • 6 tbsp Golden Ghee
  • 4 tbsp, minced garlic
  • 2 cups, shredded swiss cheese
  • salt and pepper

Steps:

  1. Preheat oven to 375 degrees F.
  2. Rinse and dry mushrooms, remove stems and gently hollow out. Place in an oven-safe baking dish.

  3. In a medium saucepan over medium heat, melt the ghee.

  4. Add the garlic to the pan and cook until the garlic and ghee begin to sizzle.
  5. Add shredded cheese and mix until melted. Crack a little black pepper and salt over the mixture.

  6. Use a spoon and spoon the mixture into the mushrooms.

  7. If any ghee remains, drizzle the rest of it over the mushrooms. Crack a little more black pepper and salt over the mushrooms.

  8. Add to the oven for about 30 minutes or until the cheese starts to brown.
  9. Enjoy!

I was wondering when i was stirring the cheese into the ghee and garlic it didn’t combine together very well is there a trick to doing this, please let me know thanks. The mushrooms were very delicious though.

No problem at all, it all melts the way it should once it’s in the oven so it’s only meant to be combined, not totally smooth before you add it into the mushrooms.

I would have usually used butter for a recipe like this, but the ghee really added another layer of depth. I’m going to be cooking with ghee more often now. These mushrooms were so filling and satisfying.
