Sweet & Spicy Chili Lime Marinated Drumsticks

These drumsticks are coated in a spicy, sweet chili lime marinade and baked to perfection. This marinade can also be used as a dressing. It’s slightly spicy but balanced by the lime.

Ingredients

  • 8 large free-range chicken drumsticks or 24 drumettes

Marinade ingredients:

  • 3 tbsp extra virgin olive oil
  • the juice of 3 limes
  • 1 1/2 tbsp minced garlic
  • 1 1/2 tsp chili powder
  • 1 tsp sea salt
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper

Instructions

  1. Combine all the marinade ingredients in an airtight jar and shake vigorously to blend. You can keep it refrigerated for up to three days if you don’t plan on using it right away.
  2. Preheat the oven to 400 degrees F.
  3. Line a rimmed baking sheet with parchment paper and place a wire rack on it.
  4. In a bowl, toss the drumsticks with 1/4 cup of the prepared chili lime marinade.
  5. Place the drumsticks on a wire rack and bake until cooked through, about 40 minutes, basting with the remaining 1/4 cup of the marinade halfway through.
  6. Cook until the drumsticks reach an internal temperature of 165 degrees F and enjoy!

Notes

This marinade can also be used as a dressing. It’s slightly spicy but balanced by the lime.
