1/2 head iceberg lettuce, cored and chopped (or more if you like)
1/4 cup keto-friendly thousand island dressing (look in the refrigerated section)
1oz bag of tortilla-style nacho cheese protein chips, crumbled (keto-friendly)
5 cherry or grape tomatoes, sliced in half
1/2 cup shredded cheddar cheese
In a skillet over medium heat, add ground beef. No oil is needed—beef is fatty enough. Cook in the skillet, breaking the beef up as you go, until it’s browned and cook through. Strain out excess fat, and add back to skillet.
Add 1/2 cup Classic Taco Sauce from Kevin’s Natural Foods, and let simmer for about two minutes until hot, then remove from heat and let cool.
Meanwhile, core and chop lettuce, then add to a large family-style salad bowl.
Add marinated taco beef to salad bowl, then add Thousand Island dressing, and mix.
Top with crumbled keto-friendly nacho tortilla chips, shredded cheddar cheese, and tomatoes.
