These Sweet Sausage Keto Stuffed Banana Peppers are grain free, simple to make, and full of flavor. Stuffed with sautéed buttery onions, herbs de Provence seasoned sausage, and topped with marinara and hot bubbling mozzarella, this is sure to become a favorite. Here’s the recipe!

Ingredients

 

  • 4 banana peppers (ends chopped off and sliced down the middle to make a boat.)
  • 1 lb sweet sausage
  • 1 tbsp ghee
  • 1/2 tsp Herbs de Provence
  • 3 tbsp chopped yellow onions
  • marinara sauce (a thin layer to coat your oven-safe plate)

 

Instructions

  1. Preheat oven to 350 degrees.
  2. Rub the banana peppers in olive oil and put in the oven for 20 minutes.
  3. Over medium heat, cook sausage until crumbled.
  4. Once cooked, add ghee, Herbs de Provence and onions.
  5. Cook on low for five minutes.
  6. Remove banana peppers from oven, and turn up broiler to 500.
  7. Fill banana peppers with sausage mixture.
  8. Top with mozzarella cheese.
  9. Place stuffed peppers on an oven-safe plate with a thin layer of marinara and cook for 5-10 minutes until mozzarella is hot and bubbling.
