Low Carb Party Meatball Ricotta Bites {Keto, Grain-Free}

Topped with some chilled ricotta with a sprinkle of fresh basil, these are bound to be the hit of any party (or dinner – that’s cool too!). I only calculated half a cup of (4 net carbs) tomato sauce in the macros, since you won’t be consuming a whole jar of tomato sauce.

Ingredients

  • 1 lb grass fed ground beef
  • 4 large eggs
  • 2 tbsp, chopped fresh basil
  • 1 tsp, chopped fresh thyme
  • 1 cup, grated parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp sea salt
  • 1 cup ricotta cheese (2 net carbs or less)
  • 1 bottle low-carb marinara sauce

Instructions

  1. Preheat oven to 375 degrees F
  2. Combine all ingredients (except marinara and ricotta) in a bowl.
  3. On parchment paper inside a baking sheet, make 16 meatballs, then press down so they’re more like sliders.
  4. Cook for about 10 minutes at 375 degrees.
  5. Remove from oven and clean any fat/cheese from the edges.
  6. Pour sauce into a 9×13” baking dish (should only be about a ½ inch of sauce in the bottom).
  7. Place meatballs in sauce, and add back to the oven for 5 minutes until sauce is hot and meatballs are 160 degrees. Remove from oven.
  8. Add ricotta cheese to a small sandwich bag and snip the corner.
  9. Pipe ricotta onto each meatball, then sprinkle them with more chopped basil. Enjoy!
