Keto Peanut Butter Mousse Dessert Recipe

Since the beginning of keto time, my favorite snack has been something that my husband likes to call “peanut butter delight.” It’s basically peanut butter whipped up with heavy (whipping) cream. If you’re into stevia or new to keto, you can add it, but I don’t. I was pretty satisfied with this recipe by itself for a very long time, but last night I added raspberries and my life changed.

Ingredients

  • 1 tbsp peanut butter (I go for Teddy’s flax blend because it’s naturally low carb and sugar-free).
  • 2 tbsp organic heavy (whipping) cream
  • 1/4 cup raspberries

Instructions

  1. Add peanut butter and heavy cream to a small cups with muddled raspberries at the bottom.
  2. Using a small whisk or fork, whip together it becomes thick (this will take a minute or two, just keep at it.) When making a bigger batch it’s easier to use a mixer or immersion blender.
  3. Top with a raspberry and mint leaf for garnish and enjoy!
