I love it with or without milk, and with fresh berries on top. It’s a great customizable breakfast option besides eggs.






  1. Preheat oven to 325 degrees, and cover a baking sheet with parchment paper.
  2. Spread coconut flakes on a baking sheet, then toss with cinnamon, vanilla extract and stevia glycerite, and rearrange back into a single layer.
  3. Bake for 5-10 minutes watching closely. As soon as they begin to brown, remove quickly. They will continue to cook a little and brown once they are out of the oven.
  4. Once they cool and get crispy, store in an airtight container with a paper towel to absorb any extra oil and moisture.


Like me, you might be thinking you need to add a little coconut oil to this mix, but it’s not really necessary. The cinnamon sticks just fine because of the extract and stevia glycerite, and extra oil can cause the cereal to cook longer and burn even after you’ve removed it from the oven.
