Cilantro Lime Cauliflower Rice

This “rice” cooks quickly in a skillet with fresh lime juice, garlic, and butter, tossed with fresh chopped cilantro. Use a food processor to quickly make cauliflower rice, or use a knife to chop pieces as small as you can. Since this side dish is low in protein it’s great paired with a taco bowl or seared garlicky steak.



  • 3 tbsp ghee or butter
  • 2 tsp minced garlic
  • 3 cups cauliflower, riced
  • 1 tsp salt
  • 2 tbsp lime juice + zest of one lime
  • ½ cup sliced scallions
  • 1 tsp fresh cracked pepper
  • ½ cup chopped cilantro


  1. In a large skillet, melt ghee or butter. Add minced garlic for about 15 seconds until fragrant (careful not to burn), then add cauliflower rice and salt. Mix and cover for about 5 minutes or until cauliflower is tender.
  2. Toss with lime juice, scallions, pepper, and cilantro, and enjoy.
