Ingredients
1 pound diced center-cut bacon
2 tbsp ghee
1 diced shallot
1/2 cup bone broth (or organic chicken broth)
1/2 cup dijon mustard
1 tbsp creole mustard (any seeded mustard will work)
1 tbsp fresh thyme
1/4 cup mascarpone
Instructions
In a skillet, crisp the bacon over medium heat, about 5 minutes.
Add the ghee. When it is melted, add the shallot and cook until soft and translucent, about 5 minutes.
Stir in the broth, Dijon mustard, creole mustard, and thyme. Bring to a boil, then reduce the heat to a simmer. Stir in the mascarpone, allowing it to melt and thicken the glaze, about 2 minutes. Use immediately. This glaze goes perfectly with chicken or pork.
