Keto Spiced Pecans

These keto spiced pecans start raw, and cook with sweetener slowly until they become the candied treats you’re familiar with, except they’re sugar-free!

Ingredients

  • 1 cup raw almonds
  • 1 cup raw walnuts
  • 1 cup raw pecans
  • 2 egg whites
  • 3 tsp vanilla extract
  • 1 cup erythritol
  • 1 cup “brown sugar” erythritol (ie. Swerve, Lakanto)
  • 10 drops stevia glycerite
  • 2 tbsp cinnamon
  • ⅛ tsp nutmeg
  • 1 pinch cayenne pepper
  • ¼ tsp salt
  • ⅓ cup water

Instructions

  1. In a bowl with a hand mixer, whip egg whites and vanilla extract until frothy. Add almonds and toss—this will help everything stick.
  2. Add the almonds into the slow cooker, then add the rest of the ingredients except the water, and toss. Cook for 3 hours on low, but keep an eye on it, and stir often.
  3. Add water and mix, then cook an additional half hour to hour. Remove, and spread out on parchment paper to cool. Once cooled and hardened, enjoy!
