Ingredients

For the cauliflower puree:
1 cup 100% pumpkin puree
14 ounces, chopped fresh cauliflower
2 tbsp heavy cream
1/4 tsp ground cinnamon
3 tbsp sugar-free brown sugar syrup I use Torani brand.
For the topping:
1/2 cup mascarpone cheese
1 tbsp sugar free vanilla sweetener

This Sweet Pumpkin Keto Cauliflower Puree is absolutely delicious. If your family craves that marshmallow-topped sweet potato dish, this recipe takes it to that level, but on a keto-friendly level. The puree is sweet like brown sugar, and the mascarpone glaze over the top perfects the whole dish.

Note: If you have cheesecloth, bundle your cauliflower in it after steaming to get out as much extra moisture as you can. This can prevent a soggy side, especially if you’re using frozen cauliflower.

Preheat oven to 350 degrees F.

Cover the bottom of a frying pan with a little bit of water and bring to a boil.

Add cauliflower and steam for 7 minutes.

Remove cauliflower and drain.

Add all ingredients including the cauliflower to a blender and pulse until it reaches a consistency you like.

Pour the mixture into a 9x9 baking dish or smaller and bake for 15 minutes.

In a bowl, microwave the mascarpone cheese at 15-second intervals until melted. Add the sugar-free vanilla syrup and mix until smooth.

Remove the puree from the oven and drizzle the mascarpone mixture over the top. Sprinkle a dash of cinnamon or some chopped nuts for garnish if you'd like.

This website is soooo frustrating. Printing a recipe is 6 – yes – 6 pages. I think I looked at 1 recipe and it was 10 pages. Really??? I don’t need all the pictures in the print out – just the ingredients + steps in one concise list.
It is much too busy and scattered to cook from on screen too.
It’s too bad – the content is nice but just too much sensory overload and the flow is not clean for me to cook.
