#Keto Recipe: Chocolate Coconut Cream Cheese Balls (OMGosh!)
I needed something sweet and delectable today. I now get odd cravings for foods I used to hate before, specifically coconut and chocolate. I can’t explain it, I imagine it’s like pregnant cravings because until now I never in my life craved (or even really liked) these two ingredients.
Tonight I remedied the situation by concocting chocolate coconut cream cheese balls, which were semi-inspired by CrossFit CatCave. There’s no real recipe, but here are the ingredients:
- Whipped cream cheese (mine had 1 carb per serving)
- Swiss Miss Diet hot chocolate packet (3 net carbs per packet)
- Shredded coconut (2 net carbs per serving)
I won’t pretend to be an expert here. I basically took about two whopping tablespoons worth of whipped cream cheese, threw in a packet of swiss miss and started mixing it all together. Then I rolled it in coconut.
Since I only made a few and had to share them, I obviously needed to make more. This time I focused more on the nutritional value and the “long tail” as they say. This time:
- Whipped cream cheese
- A scoop of chocolate whey protein
- A tablespoon of chia seeds
- A little stevia
- Shredded coconut
Personally I thought these tasted more fake-sugary than necessary. Next time I might omit the stevia but I might just stick with the Swiss Miss quite honestly!
